Ingredients:  
Ingredients:  
2 to 3 # pork butt, trimmed of fat and cubed
Flour, seasoned with salt, pepper, garlic, and onion
6 to 8 medium potatoes, peeled and cubed
8 carrots, peeled and cut in 1/2" pieces
Oil for sautee'
1 1/2 to 2 quarts broth (I use pork broth made with bones from pork butt)

Coat pork with season flour. Heat oil in a skillet and fry meat on all sides. Dump into broth which is barely at a boil. Then put carrot and potatoes into hot oil to put a little brown on them as well. Toss into broth with meat. Bring to a boil. Put lid on and turn down to a strong simmer. Check in 30 minutes to see if meat is tender and veggies are cooked. Season to taste.
