1 1/2 c. self-rising flour
1 tsp baking soda
1/4 tsp kosher salt
1/2 c. packed brown sugar
3 large eggs
1 tsp vanilla
3/4 c. greek yogurt
1/2 c. unsweetened almond milk
1/2 c. applesauce
3/4 c. semisweet chocolate chips

Preheat the oven to 350. Spray the muffin pan with olive oil

In a large bowl, combine the flour, baking soda, salt, and sugar. Set aside.

In a medium bowl, whisk together the eggs, vanilla, Greek yogurt, almond milk, and applesauce.

Pour the wet ingredients into the dry ingredients and add the chocolate chips, reserving a handful to top the muffins. Fold the wet and dry ingredients together until just combined. Don't overmix or you'll have tough muffins.

Fill the prepared muffin cups three-quarters full of batter and dot the tops with the remaining chocolate chips. Bake for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
