"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1. Peel and boil the onions. You will know they are ready when a fork can pearse them easily
2. Drain them and set them aside.

Begin cream sauce

3. Melt 2 tbsp of butter in the pan on simmer
4. Add milk
5. Place a 1/4 cup of flour in a shaker with milk. Shake until the flour lumps are gone and the mixture of flour and milk is smooth
6. Slowly stir in the flour/milk mixture into the pan so as not to form lumps. If it gets to thick add a little milk at a time to thin it out. Slowly, you can always add more milk but to add more fflour is difficult.
7. Add the cooked onions back into the pan.
8. Sprinkle salt and pepper to taste.

Enjoy
