2 Tbsp. butter or margarine, melted & divided
1/2 cup chopped onions
1 cup long-grain white rice, uncooked
2 cups water
1 can (10 3/4 oz.) condensed cream of mushroom soup
2/3 cup milk
1/4 tsp. pepper
1 pkg. (10 oz.) frozen chopped broccoli or broccoli cuts, thawed, well drained
1 cup CHEEZ WIZ cheese dip, or 1# VELVEETA© cheese, cut in cubes
1/2 cup whole wheat bread cubes (optional) or panko bread crumbs

Heat oven to 350º.
Melt 1 Tbsp. butter in large skillet on medium heat.
Add onions; cook and stir 3 to 5 min. or until tender-crisp.
Cook rice in water as directed on package.
Add rice, soup, milk, pepper, broccoli and CHEEZ WIZ; mix lightly.

Spoon into 3qt. casserole, or 13x9-inch glass baking dish, sprayed with cooking spray.
(If using, add remaining melted butter to bread cubes in medium bowl; mix lightly,© sprinkle over casserole.)

Bake 30 to 35 min. or until heated through.
