Dry Ingredients:
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp kosher salt
1/2 tsp cinnamon

Wet Ingredients:
2 sticks unsalted butter, softened
2 cups dark brown sugar, firmly packed
2 large eggs
2 tsp vanilla

Stir in by hand:
3 cups oats (not instant)
1 1⁄2 cups raisins

Preheat oven to 350º. Whisk dry ingredients and set aside. Combine wet ingredients in stand mixer on low. Increase speed to high and beat until fluffy (color will lighten).
Stir the flour mixture into the creamed mixture by hand, just until no flour is visible. Don't over mix, or you will get tough cookies. Stir in oats and raisins.
Drop 2-inches apart onto baking sheet. Bake 11-13 minutes (on center rack), until golden. Remove from oven. Let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.
