A frittata is really an Italian omelet, and can be made with any number of ingredients that you might have on hand. Potatoes, onions, peppers, other fresh or leftover cooked veggies, fresh and dried herbs, cheeses, meat. This is a fun way to get creative in the kitchen.

Start with a good oven-proof frying pan (cast iron is the best), drizzled with olive oil or butter, or a combination. When oil is sizzling, add a grated potato, some finely chopped onion, and brown the mixture. Add other veggies as desired and mix together. Add eggs, cheese, and herbs. Let eggs cook and bubble. They will begin to thicken, but will not be cooked through. Do not stir.

Turn on oven broiler. Place frittata on highest rack and broil for a few minutes, watching closely, until frittata is golden on top, and cheese has melted.

Remove from broiler. Loosen cooked edges with spatula. Flip pan upside down onto plate.

Cut into wedges and serve.
