7 oz. Feta cheese - about 1 cup crumbled
1 tbsp. finely grated lemon rind, plus more for garnish
1-2 tbsp. fresh lemon juice
1 garlic clove, minced
6 tbsp. extra virgin olive oil, plus more for serving
1 pinch red pepper flakes

Directions:

Place Feta, lemon rind, 1 tbsp. lemon juice, garlic, and olive oil in food processor and pulse until combined but still slightly chunky.

Taste - if too salty add more lemon juice

Spoon into a serving bowl, drizzle with a little olive oil, a pinch of red pepper flakes, and some grated lemon rind.
