1 CUP SUGAR
1/2 TEAS. CREAM OF TARTAR
3 TB, COCOA
1 TEAS, VANILLA
1 PINT WHIPPING CREAM, WHIPPED
1/4 CUP POWDER SUGAR
1/4 CUP FLOUR

Directions:
Preheat oven to 350. Line a 15 1/2x 10 1/2 inch jelly roll pan with parchment paper and grease and flour lightly.
Separate eggs, Beat whites with cream of tartar until stiff. Gradually beat in 1/2 cup sugar.
Sift remaining sugar, cocoa and flour together. Beat egg yolks until thick, fold flour mixture in to them, add vanilla, will be very stiff.
Carefully fold the egg yolk mixture into beaten egg whites. Spread evenly in prepared pan.
Bake 325 for 20 minutes. Let cool for 5 minutes. Turn cake unto powder sugared sprinkled cloth. Roll up after removing paper, let cool.
Unroll spread with whipped cream. Roll up again, serve with whipped cream or butter sauce.
