2 cups plus 2 Tbs (about 10.66 ounces) unbleached all-purpose flour
1/2 tsp baking soda
1/2 tsp table salt
12 Tbs (1 1/2 sticks) unsalted butter, melted and cooled
1 cup packed (7 ounces) brown sugar
1/2 cup (3.5 ounces) granulated sugar
1 large whole egg
1 large egg yolk
2 tsp vanilla extract
1 1/2 cups (9 ounces) semisweet chocolate chips

1. Adjust oven rack to middle position. Preheat oven to 325 F. Line baking sheets with parchment paper.

2. Whisk flour, baking soda, and salt together. Set aside.

3. In a stand mixer (with a paddle attachment), beat the butter and sugars at medium speed until smooth (1 minute). Add the egg, egg yolk, and vanilla. Beat on medium-low until mixed (about 30 seconds), scraping down the side as needed. Add dry ingredients and mix on low until just combined (30 seconds). Mix in the chocolate chips until just combined.

4. Divide dough into cookies. The biggest you can go is about 18, 1/4 cup balls of dough. The smallest I'd go is about 1 1/2 or 2 Tbs in which case you'll get at least 36 cookies. The more jagged the top of each cookie is, the more interesting it will be when it cooks. Put cookies onto baking sheets, 2 1/2 inches apart.

5. Bake until cookies are light golden brown and the edges start to harden, but centers are still "too soft" and puffy (11-18 minutes depending on size). Rotate baking sheet halfway through. Cool on baking sheets on cooling racks.

These are the chocolate chip cookies I make that Bryan likes best.
This recipe is easy to double if you need to make tons of cookies or freeze some cookie dough. These cookies also freeze well once baked.
