1 medium head cabbage
2 cups chopped onions
6 cups chopped green tomatoes
2 large chopped bell peppers
1 cup chopped banana peppers
1 cup chopped cauliflower (optional)
2 T. salt
2 1/2 cups vinegar
1 1/2 cups sugar
2 T. dry mustard
1 tsp turmeric
1 tsp ginger
1 tsp ground cloves
1 tsp all spice

Directions:

Chop and grind all vegetables coarsely. Sprinkle with salt and let stand in cool place for 1 hour.
Combine sugar and spices and simmer.
Pour over vegetables.
Cook 30-45 minutes after boiling starts sstirring often.
Pack in hot jars covered with juice; leave 3/8" head space. Seal jars and process 10 minutes in hot water bath. (Hot water bath is not necessary if vegetables are all done.)

Cousin Ollie Naylor is one of my uncle Alvie Smith's daughters. In her later years she lived in hamilton, TX and was a frequent host for my dad and mom (Melvie and Maggie Smith.) I took my parents to her house several times during their later years. She often served chow chow with our lunch and sent this recipe to mom to give to me. The note was dated 9-16-92
