Eggplant (cut in half and remove flesh and keep outer skin intact)
Tomatoes
Other Vegetables to taste (peppers, celery, mushrooms, and other non-flowery vegetables)
Egg
Parmesan Cheese
Olive Oil
Salt
Pepper

Directions:
Directions:
Preheat oven to 350º
Dice the eggplant flesh, add salt, let rest for 10 minutes and remove excess water by squeezing in a clean dishtowel
Dice tomatoes, and other vegetables
Mix all ingredients with the salt, pepper, olive oil and egg
Stuff into eggplant skins
Coat with a little olive oil, and sprinkle parmesan cheese on top
Bake until golden brown on top and edges of eggplant skin look wilted
