Directions:
Add one packet of yeast to 1 c. warm water; let sit a few minutes
Add flour until dough begins to form, then add a tsp. of salt; continue to add flour until the dough doesn't stick to the bowl (mixer or by hand).
Knead dough on floured surface by folding dough, turning 90 degrees and refolding; repeat until dough is tacky and smooth
Put in bowl and let rise overnight (use quick rise yeast for faster dough)
Form risen dough into a rough loaf by rolling into log and pinching ends; let rise again for at least 15 minutes
Pre-heat oven to 375º and use corn flour to coat the bottom of a baking sheet; put in the oven
Wet fingers and rub outside of the loaf until the top is wet; transfer to baking sheet and make slits in the top of the loaf
Turn temperature down to 350º and bake until golden brown
Bread is done when bottom is tapped and it sounds hollow like a drum
Let it cool down before eating
