Gran's Shortbread Recipe

3 cubes butter, softened
3/4 Cups fine sugar
4-1/4 Cups plain flour
3/4 Cup white rice flour

Directions:
Directions:
Soften butter to room temperature. (Gran used to put it in the sun)
Cream butter and sugar. Add plain flour, mix until crumbly. Turn out onto table and gradually add rice flour, whilst kneading until the rice flour is integrated. Knead, knead, knead.
Halve, and put into 9" round pans. Flatten with a round tipped knife (you know the ones I mean) and prick with a fork all over.
Put into a 400º oven, reduce to 350º and bake until golden (about 55 min). Sprinkle with extra fine sugar. Cool just slightly, cut into wedges with a sharp knife.
