9-inch pie crust (single or double works)
3 Tbsp butter
1/2 cup chopped onion
15 oz can diced potatoes, drained
1/3 cup flour
1/2 tsp oregano
1/2 tsp garlic powder
1/4 tsp pepper
1 1/4 cups beef broth
1 carrot, chopped
1 cup frozen green peas
2 cups cubed leftover pork roast

Directions:
Directions:
Heat oven to 350'.
Cook the onion and potatoes in teh butter, but do not brown.
Sprinkle with the flour, and stir to blend.
Season.
Pour in the broth.
Add the peas, carrots and meat.
Bring to a boil.
Spoon into the pie shell (or pan if using 1 crust).
Top with pie crust dough.
Flute the edges and cut slits in the top for steam.
Place on a baking sheet and bake for 25 - 30 minutes, until the crust is golden.
Let stand for 10 minutes before serving.
