2 egg white (slightly beaten)
1 c. mashed bananas (about 3)
3/4 c. sugar
1/4 c. oil
1 1/2 c. flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/8 tsp. salt
1/2 - 3/4 c. semisweet chocolate chips

Directions:

350º oven, sprayed 8" X 4" X 2" loaf pan

1. In medium mixing bowl, stir together egg whites, banana, sugar & oil.
2. Mix together flour, baking powder, baking soda, cinnamon & salt.
3. Add flour mixture to egg mixture, mix until well blended.
4. Spread into loaf pan and bake for 50-60 min.

The original recipe says bake for 45-50 min. It seems that it never gets done in the center within that time. I also use the disposable aluminum pans, so that could be part of the problem too.
