3 Cups milk
3 oz sugar

3 egg yolks
2 whole eggs
1.87 oz corn starch
2 oz sugar

3 T butter (not margarine)
2 1/4 teas. vanilla

Directions:
Directions:
1. Dissolve 3 oz sugar in milk and bring just to a boil
2. With a whip, beat the egg yolks and whole eggs in a stainless steel bowl
3. Sift the sugar and corn starch into the eggs. Beat with the whip until perfectly smooth.
4. Slowly add heated milk (pour hot into cold--that's called "temper") to egg mixture, stirring the entire time with the whip.
5. Return the entire mixture to the saucepan and bring to a bowl, stirring constantly.
6. When mixture comes to a boil and thickens, remove from the heat.
7. Stir in the vanilla and butter and stir until butter is completely melted.

You can add semi-sweet or bittersweet chocolate, for chocolate cream pie.
