8 oz elbow noodles (2 cups)
1 medium sweet potato (about 12 oz)
2 cups non-fat milk
2 T flour
1 small garlic clove, minced
1 1/4 C shredded sharp cheddar cheese
1 T dijon mustard
1/2 cup frozen peas, thawed
3 T dry bread crumbs
1 tsp olive oil

Preheat broiler.
Coat 2 QT baking dish with spray. Cook noodles until tender. Drain and set aside. Prick potato and microwave on High until tender 7-10 minutes. Whisk milk, flour and garlic in a large saucepan. Heat over medium, whisking frequently, until steaming and hot, but not boiling. Remove from heat. When potato is cooked and has cooled enough to handle, cut open and scoop out flesh. Puree with an immersion blender until smooth. Add cheese and mustard and stir until cheese melts. Add the pasta and peas to the sauce and stir to coat. Transfer to baking dish. Combine breadcrumbs and oil and sprinkle on top. Broil on upper rack until top is lightly browned and crispy, 1-2 minutes.
