1 lb lean Beef, cubed(brisket)
1 1/2 quarts Water
1 Tbsp Salt
1 1/2 C Shredded Raw Beets
3/4 C Shredded Carrots
3/4 C White Turnips or Rutabagas-shredded
1 Onion, chopped
2 Tbsp Tomato Puree
2 Tbsp Vinegar
1 tsp Sugar
2 Tbsp Butter
1/2 head Cabbage, Shredded
Fresh Ground Pepper
2 Bay Leaves
Sour Cream

Directions:
Directions:
Simmer beef, covered, in salted water until tender--about 1 1/2 hrs
Separately, simmer the beets,carrots,turnips,onions, tomato puree,vinegar,sugar & butter
Cover. Cook for 15 min. stirring frequently
Add the cabbage and cook 10 min. longer.
Add the vegetable mixture, pepper ans bay leaves to meat broth
Adjust seasonings, add more water and/or vinegar if needed
Cook until vegetables are tender
To serve----Remove bay leaves and add a dollop of sour cream
