Cut-Out Sugar Cookies Recipe

1 C margarine or butter
1 1/2 C confectioner's sugar
1 egg
1 tsp vanilla
1/2 tsp almond extract
2 1/2 C flour
1 tsp baking soda
1 tsp cream of tartar

Directions:
Directions:
Cream margarine and sugar.
Add egg, vanilla, and almond extract.
Slowly add dry ingredients.

Dough may be sticky.
Chill dough 1 1/2 hours.

Flour a surface to roll dough.
Flour rolling pin.(I often use a roller cover.)
Roll to about 1/8 to 1/4 inch thick.
Cut into desired shapes and place on ungreased cookie sheets. (I often use parchment paper).

Be careful not to work the dough too much.
Put scraps in a pile and then gently unify into a ball and re-roll.

Bake at 350º for 6 minutes. Depending on thickness, may need a couple minutes more.

Let cool before icing (see Decorating Icing recipe)

Makes 4-5 dozen cookies depending on size of cut outs.

These are THE cookies! Almond extract is a must!
They freeze well (iced or un-iced).
