Ingredients: 1 green onion, finely chopped 2 tbsp. canola oil 2 tbsp. plus 1/2 c. butter divided 1/2 c. chicken broth 1 8 oz. bottle of clam juice 1 lb. bay scallops 1 lb. uncooked small, peeled and deveined shrimp 1 pkg. 8 oz. imitation crab meat chopped 1/4 tsp. white pepper divided 1/2 c. all-purpose flour 1 1/2 c. 2% milk 1/2 tsp. salt 1 c. heavy whipping cream 1/2 c. shredded parmesan cheese, divided 9 cooked lasagna noodles

Directions:Preheat oven to 350º
1. In a large skillet, sauté onion in oil and 2 tbsp. butter until tender. Stir in broth and clam juice. Bring to a boil and add the scallops, shrimp, crab and 1/8 tsp. of white pepper. Return to a boil. Reduce heat and simmer uncovered for 4-5 minutes or stir gently until the shrimp turns pink and scallops are firm and opaque. Drain into a bowl and reserve the cooking liquid and set seafood mixture aside.
2. In a large saucepan, melt the reaming butter. Stir in the flour until smooth. Combine milk and reserved cooking liquid. Gradually add to the saucepan. Add salt and remaining white pepper. Bring to a boil and cook and stir for 2 minutes until thickened.
3. Remove from the heat and stir in cream and 1/4 c. parmesan cheese. Stir 3/4 c. of the sauce into the seafood mixture.
4. Spread 1/2 cup of the white sauce in a greased 13" x 9" baking dish. Top with three noodles, spread with half of the seafood mixture and 1 1/4 cups of the white sauce. Repeat layers and top with the remaining noodles remaining noodles, sauce and parmesan cheese.
5. Bake uncovered for 35-40 minutes or until golden brown. Let stand for 15 minutes before cutting. |

My grandson, Joey, loves this seafood lasagna and I like to make it for him.
