2 lb whole brie cheese
16 oz apricot preserves
1 sheet frozen puff pastry, thawed

Directions:
Directions:
Place brie, with rind, in an oven-proof serving dish with shallow sides. Spread preserves over cheese. Stretch pastry to cover the brie and tuck under sides. Bake in preheated 350º oven for 25 minutes. Serve with your favorite crackers.

Jane got this recipe from her dear friend Heidi Munger, who passed away some years ago. This is a favorite that can be modified a number of ways. Jane says she has used raspberry preserves and/or walnuts/pecans and substituted several sheets of phyllo for the puff pastry. Be creative!
