Marinade:
1 c. soy sauce
1/2 c. brown sugar
1/4 c. dry sherry
2 tbsp. green onion
2 tbsp. fresh chopped cilantro
1 tbsp. minced garlic
1 tbsp. peeled and minced ginger




Glaze:
1/2 c. Hoisin sauce
1/2 c. ketchup
1/4 c. honey
1/4 c. soy sauce
1/4 c. dry sherry
2 tbsp. unseasoned rice wine vinegar
2 tbsp. hot chili sauce
2 tbsp. peeled and minced ginger

4 lbs. pork spare ribs, trimmed of fat and membrane

To prepare marinade:
Simmer all marinade ingredients until sugar is dissolved. Let cool and marinate the ribs in the refrigerator for at least 4 hours (preferably overnight). Bring the ribs to room temp before grilling.

To prepare glaze:
Simmer all glaze ingredients for about 15 minutes until thickened. Keep warm.

To prepare ribs:
Drain any excess marinade from the ribs and place on grill meat side up. Cook over indirect hear for 1 - 1 1/4 hours turning occasionally. Brush with glaze frequently.
