1 lb. Gulf shrimp, peeled and deveined
6 slices chopped bacon
2 tsp lemon juice
1 c. green onion tops, sliced thin
2 garlic cloves, chopped
1/4 c. half and half
Emeril's Essence

Directions:
Directions:
Sprinkle shrimp very lightly with Emeril's Essence (it is VERY salty so be cautious). Set shrimp in fridge. Chop bacon and cook completely. Remove bacon from pan and set aside leaving a little grease in pan. Cook shrimp until about halfway done in bacon grease. Add green onion, garlic, and bacon and sauté for about 2 minutes. Add lemon juice and toss to coat. Add half and half and stir. Pour over cheese grits.

For cheese grits:
I prefer stone ground grits. Cook following instructions on package. Add Parmesan cheese, half and half, and a little Emeril's Essence till correct consistency and flavor. I taste these till I get them just right.
