8-10 Russet Potatoes
1 stick of Butter
1 cp. Yellow Onion
1/12 cp. Milk
1/2 cp. Medium to Sharp Cheddar Cheese (Tillamook is Best)
1 1/2 tbsp. Pepper
1 tsp. Salt

Peel raw Potatoes and cut up like thick streak fries.
Put in a cake pan and set aside.
I a medium sauce pan melt butter and caramelize the sliced onions. Then add the Milk. Once the milk is hot (not boiling), add the cheese and salt and pepper.
Add flour until you get the consistency of Pea Soup.

Pour over the Potatoes and cove with foil.

Bake 350º for 1 to 1 1/2 hr. until potatoes are soft.

Remove foil and brown cheese.
