2 cups Elbow Macaroni
3 Tbsp. Butter
3 Tbsp. Flour
1 tsp. Onion, chopped
1/2 tsp. Salt
1/8 tsp. Pepper
1/8 tsp. Cayenne
1 1/2 cups Milk
1 cup Cheddar Cheese, shredded
1 cup Monterey Jack Cheese, Shredded
Bread Crumbs & Paprika - Garnish

Cook macaroni as indicated on package. Melt butter in 2 quart glass dish in the microwave 45 seconds. Stir in onion and microwave 30-45 seconds. Stir in flour and seasonings until smooth and microwave 30 seconds. Blend in milk and microwave 4 - 7 minutes stirring twice during this process. Mix in cheese and microwave 30 seconds. Stir in drained and cooked macaroni. Sprinkle with bread crumbs and paprika and put under broiler to just brown top is desired.

Optional: Add ham or bacon
