4 Eggs
2 cup Sugar
1 cup Vegetable Oil
1 tsp. Vanilla
3 1/2 cups Flour
1 1/2 tsp. Baking Soda
3/4 tsp. Baking Powder
1 1/2 tsp. Salt
1 tsp. Cinnamon
2 cups Zucchini, grated
1 cup each Raisins, Chopped Nuts, Granola, Dates, Optional

Directions:

Blend eggs, sugar, oil and vanilla. In a separate bowl combine the dry ingredients. Add gradually to the egg mixture then fold in the zucchini. Add any optional items. Pour into 2 greased loaf pans and bake at 350º for 55 minutes. Remove from pan.
