2 lg. eggs
1/4 c. unsifted all-purpose flour
1 1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. black pepper
1 sm. onion
4 large baking potatoes (2 lbs. peeled)
5 Tbsp. vegetable oil (for frying)

Directions:
Directions:
In a large bowl, whisk eggs, flour, salt, baking powder and pepper. Grate onion - add to egg mixture. Grate potatoes in a large hole grater just before frying to avoid discoloring. Add to other ingredients.
In a large skillet, heat 1 Tbsp. oil over medium high heat, tilt to cover the bottom of the pan. Drop a level 1/4 c. of potato mixture into the skillet. Flatten into 3-inch rounds with turner.
Cook 2 minutes on each side until golden brown. Drain on paper towel. Serve warm.
