Aubrey's German Potato Salad Recipe

4 lbs. potatoes, cooked and then peeled, cut into chunks
Kosher salt
1 1/2 lbs. raw bacon, chopped
1 1/2 chopped onion
Ground black pepper
1/2 cup apple cider vinegar (raw cider vinegar is best)
1/2 cup whole grain mustard (Aubrey and I like the Engelhoffer Stone ground. 4 oz. jar is a half of a cup).
8 hard boiled eggs, sliced
1/2 cup chopped green onions

Directions:

Cook potatoes in salted water until tender. Drain well and keep potatoes warm. Put eggs into bowl. Cook bacon until crisp. Throw in onion for the last few minutes of cooking. Season the bacon and onion with the black pepper. In large bowl, combine potatoes, crispy bacon, onion with all the fat, vinegar (to taste), mustard, eggs, and green onions. Season to taste with Kosher salt and pepper. Mix well. Using the back side of the spoon, mash mixture. It should be well blended but a good mixture of smooth and lumpy.

I had to include this recipe from my niece Aubrey. I thought I had a good handle on potato salad until I visited in San Antonio and stayed at Aubrey's home. That night we had Bratwurst and she serve me this German Potato Salad. Just when I thought I knew it all.......
