2 1/4 cups (whole wheat) or gluten free flour
2 1/4 tsp baking powder
3/4 tsp baking soda
2 1/2 tsp cinnamon
3/4 tsp nutmeg
1/2 tsp salt
2 tbsp coconut oil (or unsalted butter) melted and cooled slightly
3 large egg whites, room temperature
1 tbsp vanilla creme stevia (or agave)
1/2 cup plain nonfat Greek yogurt
1/4 cup maple syrup
1 1/4 tsp agave nectar
3/4 cup nonfat milk
2 1/2 cups freshly grated carrots (about 4-5 medium)

Frosting:
1 cup plain nonfat Greek yogurt
1 (8oz) block of cream cheese (or Greek yogurt cream cheese)
1 1/4 tsp vanilla creme stevia (no substitute)

Preheat oven to 350º
1. Cut two 9 inch circles of wax paper to fit inside two 9 inch round cake pans. Lightly spray the pans with cooking spray. Press the wax paper circles into the bottoms of the pans.
2. In a large bowl, whisk together dry ingredients (to salt). In a separate bowl, whisk together coconut oil, egg whites, and vanilla. Stir in the yogurt, mixing until no large lumps are present. Mix in maple syrup and agave nectar. Alternate between adding flour mixture and milk , ending with the flour mixture. Stir until just incorporated. Gently mix in carrots.
3. Divide batter between two pans. Bake at 350º for about24 - 28 minutes or until center feels firm and a toothpick inserted in the center comes out clean. Do not over bake.
4. Cool in pans for 10 minutes, then invert cakes onto plates and peel off wax paper. Cool completely.

Frosting:
Add Greek yogurt, cream cheese, and agave nectar together and beat with an electric mixer until smooth.

This recipe has no refined sugar and no butter . . . and it tastes amazing! I make a cream cheese frosting and filling for this.
If you don't have access to vanilla creme stevia, I recommend using another simple cream cheese frosting instead.
