1 large had of cauliflower, cut into small flowrets...
1 pound of spicy sausage, any casing removed...
1 cup low-sodiumchicken stock...
1/2 cup dry white wine, such as Sauvignon...
1/4 cup heavy cream...
1 cup grated Parmesan cheese...
Extra-virgin olive oil...
10 oz. shredded Brussels sprouts...
Freshly ground black pepper...
1/4 cup chopped Italian parsley...

Directions:
Directions:
Bring large pot of water to a boil and season with salt (1/2 T) ...
Add the cauliflower, cook until tender, 10 to 13 minutes...
Remember small pieces will cook faster than larger pieces, so check the larger pieces for correct doneness...
Drain cauliflower and put back into pot over medium-high heat, stir in chicken stock, white wine, and season with 1 t of salt...
Cover pot and bring to boil, simmer 5 minutes, add cream and smash with a potato masher until smooth...

Fold in cheese just before serving....

In a large skillet over medium-high heat saute the sausage until until brown, about 3 minutes, add 1 T olive oil, Brussels sprouts, 1/2 t salt and 1/2 t black pepper, sauté until Brussels sprouts are tender, about 4 minutes, add the parsley and stir well...
Serve the sausage and Brussels sprouts over the mashed cauliflower and drizzle a little olive oil over each serving..
