4 center-cut pork chops (about 2 lbs.)
Salt & pepper
1/2 lb. Small mushrooms, quartered
1 small onion, finely chopped
3/4 cup dry Sherry
2 T. Dijon-style mustard
1/2 cup whipping cream
Chopped parsley

Directions:
Directions:
Trim off some of the fat from the chops, and heat in a large frying pan until melted; discard pieces of fat. Sprinkle chops with salt and pepper. Brown on both sides in heated drippings; remove chops from pan and reserve them. Add mushrooms and onion to pan. Cook, stirring, until onions are lightly browned. Smoothly stir in Sherry and mustard. Return chops to pan, cover, and simmer over low heat for 45 minutes, until chops are tender. Transfer chops to a warm serving platter. Add cream to pan and reduce sauce by boiling and stirring over high heat until slightly thickened. Pour sauce over meat. Sprinkle with parsley.
