2 lbs. ground beef
4 eggs
1/2 c. italian seasoned bread crumbs
1/4 c. ground flax seed
1/2 c. oatmeal
1 small onion, finely chopped
4 garlic cloves, finely chopped
2 carrots, finely chopped
1 tsp. salt
1/4 tsp. ground black pepper
1 tsp. parsley flakes
1 tsp. onion powder
1 tsp. garlic powder
1/4 tsp. fennel seed
1 tsp. basil
1 14 oz. can diced tomatoes
potatoes, carrots, whole onions
or any other vegetables you'd like to
surround your meatloaf.

In large bowl combine ground beef, eggs, bread crumbs. flax seed, oatmeal, onion, garlic and carrots plus seasonings, mixing well. Shape into a ring or loaf and place in baking pan. Surround with
potatoes and other vegetables desired. Pour can of tomatoes over all, sprinkle with salt and pepper and other seasoning you like, cover and bake for 1 hour or until veggies and meat is cooked.

Very tasty and nutritious, don't let the flax seed and oatmeal turn you away. You don't even taste it, and it is very good for you. Be sure to finely chop the onion, garlic and carrots going into the meat mixture! Enjoy!
