5 lbs. Yams
1/2 cup butter, divided
3/4 cup brown sugar
1/4 cup Amaretto liqueur (or substitute 1 Tbs almond extract)
1/4 cup orange marmalade
2 tsp. Finely minced candied ginger
Salt & pepper
20 Amaretto cookies, crushed

Directions:
Steam or boil yams until soft (30 to 40 minutes). Silt skins and scoop out insides. Put yams through food mill or mash with potato masher. Do not use food processor. Add 1/2 butter, Amaretto, marmalade and ginger. Salt and pepper to taste. Crush cookies and mix with 1/4 cup melted butter. Top yams with cookie and butter mixture. Bake in oven at 350º for 15 minutes.
