2 whole heads of garlic
2 lbs. cubed Yukon Gold Potatoes
1 cup chopped onion
2 T. Plain fat-free yogurt (or fat-free sour cream)
1 tsp. Dried rosemary (or diced chives or herb of your choice)
1/2 tsp. Salt
1/4 tsp. Freshly ground black pepper

1. Preheat oven to 350º.
2. Remove white papery skin from garlic heads (do not peel or separate cloves). Wrap each head separately in Foil. Bake at 350º for 1 hour and 10 minutes. Separate cloves, squeeze to extract pulp. Discard skin.
3. Place potatoes and onion into saucepan, cover with water and bring to a boil. Cover, reduce heat, and simmer 15 minutes or until potato is tender. Drain in a colander over a bowl, reserving 1/4 cup liquid. Combine garlic, potatoes, 1/4 cup cooking liquid, and remaining ingredients, mash with a potato masher.
