2 c all purpose flour, sifted
1 1/2 tsp baking powder
3/4 c orange juice
1 tsp salt
1 egg well beaten
1 to 2 c cranberries, coarsely chopped
1 c sugar
1/2 tsp soda
1/4 c shortening
1 tbsp. grated orange rind
1/2 c chopped nuts (optional)

Grease a 9X5X3" loaf pan and place wax paper on the bottom of the pan. Grease wax paper. Heat oven to 375ºF. Mix above ingredients together and fold into pan. Bake in oven 1 hour or until brown. Remove from pan onto a wire cake rack and peel wax-paper from loaf. Let cool. Place in refrigerator overnight for easy slicing.
