1 turkey (any size)
3 stalks celery
1 large onion, whole
1 apple, whole
Salt and pepper to taste

Preheat oven to 475º, very hot, about 9 or 10 P. M., the night before you are planning to serve your feast! Place turkey in a covered roaster pan with the onion, celery, and apple. Add 1 quart warm water. Bake 1 hour, turn oven off, and DO NOT open oven door. Leave all night. In the morning, your turkey will be golden brown and you'll have plenty of broth for dressing and gravy. Also, the tenderest turkey you've ever tasted!

This is from the yellow Bell's Best (p. 586) from Mississippi Telephone Pioneers. I was told about this recipe about 35 years ago and cooked it with great reluctance. It's the ONLY way I cook a turkey now.
