3 c sifted all purpose flour
4 tsp baking powder
1 tsp salt
1 c white sugar
1 c nuts (almonds, walnuts or pecans) chopped
2 1/2 c coarsely cut pitted but not peeled red plums (about 8)
1 egg
3/4 c milk
1 to 3 c orange juice (may be fresh or fresh frozen reconstituted)
1 tbsp. grated orange rind (from 1 large orange)
3 tbsp. cooking oil or soft butter melted

Directions:

Into a large mixing bowl sift together the flour, baking powder, salt and sugar. Add nuts and plums and carefully mix. In a smaller bowl beat egg, then add milk, orange juice and rind, oil (or butter). Mix. Add to sifted dry ingredients, stirring only until blended. Turn into buttered medium-sized loaf pans, making a slight depression at centre. Cover with foil and let stand on counter 20 min. Still covered with foil, bake at 350ºF 20 min, then remove foil and bake 50 min longer. Cool on racks. Slice one for current meal, freezer wrap second loaf and freeze.
