1 c. Butter (softened)
1 c. Sugar
1/2 c. Light Brown Sugar (tightly packed)
2 lg. Eggs
2 3/4 c. All-purpose Flour
1/4 c. Cocoa powder
1 1/2 tsp. Cream of Tartar
1 tsp. Baking Soda
1/2 tsp.Ground Cinnamon
1/2 tsp Salt

For rolling:
3 tbsp. Sugar
1 1/2 tsp. Ground Cinnamon

Preheat oven to 350º
Cream butter; add sugars and beat until light and fluffy
Add eggs, one at a time, beating until combined and pausing after each addition to scrape down sides of bowl
In separate, medium-sized bowl whisk together flour, cocoa powder, cream of tartar, baking soda, cinnamon and salt
With mixer on low speed, gradually add flour mixture to butter mixture, pausing occasionally to scrape down sides of bowl
Once all ingredients are incorporated, chill in refrigerator for 30 minutes
While dough is chilling, preheat oven to 350Fº and prepare cookie sheets by lining with parchment paper
In small bowl, whisk together sugar, ground cinnamon and cocoa powder
Once dough has finished chilling, remove from refrigerator and roll into 1- 1 1/2" balls
Roll in sugar/cinnamon mixture until coated and transfer to baking sheet, spacing about 2" apart
Bake for 8-10 minutes
Remove from oven and allow to cool 5-10 minutes on cookie sheet before transferring to wire rack to cool completely
