4 tbsp.Butter
3 tbsp. Flour
2 1/2 c. Milk
Salt
1 1/2 c. Bread Crumbs
8 oz. Grated Cheese (Sharp Cheddar and Smoked Gouda)
1 lb. Pasta (Boubles - if not available, Cavatappi, Elbows or Shells)

Preheat oven to 375º
Make a roux - melt the butter and mix in the flour - stirring constantly
Cook pasta to al dente (2 minutes short of pkg. instructions)
In a separate small saucepan, warm the milk until just before boiling point
Once milk is warm, add to the roux; add cheese to melt and salt to taste
Mix pasta and cheese sauce in a casserole dish; top with bread crumbs
Bake 15-20 minutes, until bread crumbs are golden-brown and the cheese bubbles around the edges
