1 1/2 pounds of sweet potatoes, peeled and cubed...
1 1/2 t butter...
1 T extra virgin olive oil...
2 t finely chopped fresh thyme, plus leaves for garnish...
1/4 cup 1% milk...
1/2 t kosher salt...
1/4 t black pepper...

Directions:
Directions:
Cook potatoes in large pot, with water line 2 inches above potatoes...
Bring potatoes to a boil over high heat, reduce heat to medium-low and cook potatoes until easily pierced by fork...
Drain potatoes, in same pot add the butter and olive oil which has been stirred together over medium heat in a small pan, until it's browned and fragrant, about 3 minutes cooking time...
Remove mixture from heat, add the chopped thyme, stir, set aside...
Now add the milk, salt and pepper, to the potatoes and mash potatoes with a hand masher to desired consistency...
Drizzle with butter mixture and garnishwith thyme leaves...
Enjoy!
