1 T canola oil...
1, 1 pound, pork tenderloin, trimmed and cut crosswise into 12 medallions...
1/2 t kosher salt...
1/4 t garlic powder...
1/4 t black pepper...
Fresh thyme leaves...

Directions:
Directions:
Heat oil in a large skillet over medium-high heat...
Arrange pork medallions on a flat work surface and press down on each one to flatten out evenly, with the palm of your hand...
Combine salt, garlic powder and pepper and sprinkle over each medallion and add them to the heated skillet in a single layer...
Cook about 3 minutes per side, remove skillet from the heat and let them rest for 5 minutes...
Plate medallions, 3 preserving and garnish with the fresh thyme leaves...
Enjoy!
