3 1/2 lbs. chicken, cut or 4 lbs. turkey parts
3 tbsp. salad oil
5 tbsp. flour
1 large onion chopped
1/2 cup chopped celery
3 cups hot water (or chicken broth)
1/2 cup chopped parsley
1 bay leaf
1/2 tsp. dried thyme
2 tsp. salt
1 tsp. pepper

Rub turkey pieces with salt and pepper (only 1 tsp salt and 1/2 tsp pepper for chicken)
Brown slowly in oil, over medium heat. Remove pieces, stir in flour until smooth. Cook until a rich brown roux (about 15 minutes). Stirring constantly. Lower heat and add onion and celery, cover. Cook until soft (10 minutes). Stir often. Gradually stir in water. Add parsley, bay leaf, thyme, turkey (or chicken) and salt and pepper to taste. Cover, simmer turkey about 2 hours; chicken 40 minutes.
Can be served over cooked rice.
