Microwave Oyster Dressing Recipe

4 - 6 dozen oysters. (depending on size)
1/2 loaf poboy (french) bread
1 cup chopped onions
2 tbsp. chopped bell pepper
1/2 cup chopped celery
1/2 cup chopped green onions
2 tbsp. parsley flakes or 1/4 cup fresh parsley
1 tbsp. garlic chopped fine
1 tsp. Creole seasoning
1/4 cup olive oil
1 stick butter
1 egg

Directions:
Directions:
Cube bread and soak in oyster juice and water.
Using a 2 quart batter bowl, saute seasoning on High 5 minutes in oil.-(microwave oven)
Add oysters, cut in pieces (I pulse them in food processor) on High for 10 minutes, stir halfway.
Add 1 stick of butter and stir until melted. When cooled, add 1 beaten egg and stir. If dressing seems watery, add italian bread crumbs.
Place in a 2 quart baking dish, sprinkle with bread crumbs and cook 10 minutes on 80% power, or bake in oven 350º until bubbly.
