Buttered Fettuccini with Peas

Make after preparing rouladen

1 pkg fettuccini
½ cup frozen peas
1 clove garlic, minced
salt & pepper
½ cup unsalted butter

Directions:

Prepare fettuccini according to directions. In a pan melt butter and add garlic and peas; stir a couple of minutes at medium heat. Add fettuccini and fold in peas and garlic.
 

Rolled Flat Iron Steak

2 flat iron steaks
4-6 asparagus spears, trimmed
4 oz gruyere cheese
salt & pepper
1 sprig of parsley

Directions:
Directions:
Rinse steak and pat dry. Cut steak almost all the way through horizontally so that it opens like a book. Cover with plastic wrap and using either a meat mallet or small heavy pan, pound meat to an even thickness. Season both sides with a pinch of salt and pepper. In a large sauce pot boil salted water and blanch asparagus for 1 min. after ice bath the asparagus and set aside. Arrange pounded steak and place 2-3 asparagus spears and cheese in the center, then roll and tie with twine. In a clean pan, add 1 tbsp of canola or blended oil, sear at medium high heat, turn heat down and cook 6-8 minutes or until evenly browned. Remove from pan and rest about 5 minutes before cutting away twine. Plate fettuccini and place rolled steaks across the top. Garnish with sprig of parsley.
