1 Onion (sliced)
2 tbsp. Butter
Rendered Pork Fat or Olive Oil
8 oz. Chicken Broth
2 tbsp. Flour
1 - pint Half-and-Half (full fat or fat free)
2 c. Fresh or Frozen Peas
Salt and Pepper to taste
Freshly Grated Nutmeg (or powdered)
Grated Parmesan
Optional: 1/4 lb. Pancetta
1 lb. Pasta (Shells, Orecchiette, or any shape that will hold the pea)

Directions:
Directions:
Combine onions and butter; microwave for 5 minutes
Optional: sauté pancetta in pork fat or a tsp. of olive oil
Boil and salt the pasta water
Remove pancetta from the pan, add onions to fat and caramelize, then add pancetta
Deglaze the pan with chicken broth
Whisk in flour and cook
Whisk in half-and-half, grated nutmeg, add salt and pepper to taste
When pasta is two minutes from ready, add peas and cook
Drain pasta, reserving a cup of pasta water to use if needed for sauce
Add pasta to the pan and top with grated cheese
