3 qt. water
2 onions, diced
6 garlic cloves, chopped
3 celery stalks, sliced
4 carrots, sliced
1/3 of a cabbage, diced
1/2 of a rutabaga, diced
2 c. corn
1 block extra firm tofu
4 bay leaves
1 tsp. poultry seasoning
1/2 tsp. cumin
2 tsp. basil
1 Tbsp. sea salt
1-28 oz. can crushed tomatoes (or 1 qt. home canned)
3/4 c. natural smooth peanut butter

Directions:
Directions:
In a large pot, add all the prepared vegetables and herbs to the water. Drain and rinse the tofu, and cut into 1/2 inch cubes. Add the tofu to the pot. Cook until the vegetables are tender. Dip off some of the broth and add to the peanut butter. Stir it in and get our all the lumps so it will be easier to mix the peanut butter into the soup. Add the peanut butter and tomatoes to the soup. Mix in well and serve.
