4 Medium Zucchinis
One Package of Lightlife meatless Italian sausages, chopped (If you prefer real meat, turkey sausage tastes best with this recipe)
2 c. whole milk ricotta
1/2 c. grated parmesan (save some for garnish!)
1 egg
handful of chopped chives
2 cloves garlic, minced
1 1/2 c. marinara sauce
1/2 c. shredded mozzarella
Salt and Pepper to taste

Directions:
Directions:
1. Cook chopped sausage on stove top
2. Mix sausage, ricotta, parmesan, egg, chives, garlic and salt and pepper. Set aside in a warm place.
3. Preheat oven to 375.
4. Pour a bit of the sauce on the bottom of a baking dish to prevent sticking
5. Slice the zucchini with a veggie peeler lengthwise. Pat dry to absorb extra moisture.
6. Lay 2 slices vertical so they overlap and 2 across those.
7. Scoop some of the cheese mix into the center and fold all ends into the center.
8. Lie them seam down in dish.
9. Top with sauce and cheese
10. Bake 25-30 minutes
11. Remove from oven and sprinkle with remaining parmesan cheese.
