1/2 cup solid vegetable shortening
1/2 cup softened butter
2 tsp vanilla
4 cups sifted powdered sugar
2 Tbsp milk, divided

Directions:
Directions:
1. Cream butter and shortening until light and fluffy.
2. Add vanilla.
3. Add sifted sugar gradually, one cup at a time. Scrape sides and bottom often. Icing will appear dry.
4. Add milk, one tablespoon at a time. Beat on medium speed until light and fluffy. It may not take the full 2 tablespoonfuls to accomplish this.
5. Keep icing covered with a damp cloth until ready to use.

I typically double this recipe for cakes and cupcakes. This icing can be kept up to two weeks in an air tight container, just whip before use. It freezes well too.
