5 lb Red Potatoes
1 pack Dry Italian-Salad Dressing mix
1/4 c Apple Cider Vinegar
1/4 c Water
1 c Extra Virgin Olive Oil
1/2 c chopped Celery
1 c Bacon Bits
1/4 c chopped dill pickles (optional)
1/4 c chopped Green Onion
3 c Mayonnaise

Directions:
Directions:
1. Place potatoes in large pot of water bring to boil over high heat, reduce heat to medium-low cover, simmer until tender about 20 minutes. Drain and allow to steam dry.

2. Whisk together Italian dressing mix, Apple Cider Vinegar, water and Olive Oil until thoroughly blended. Set Aside.

3. Roughly slice Potatoes with butter knife into chunks. Pour dressing mix over the hot Potatoes, toss to coat and let cool. Add Celery, Bacon, Green Onion and lightly stir in Mayonnaise until all are combined and serve
