1 medium onion
1 cup cooked rice
1 can cream of chicken soup
½ small can evaporated milk (I use reg milk when I don’t have this)
½ lb velveeta cheese
1 small pkg frozen chopped broccoli
1 stick of butter
I pkg of crushed saltines

Directions:
Directions:
1. Cook rice and broccoli according to package.
2. Cook the onion in about a tablespoon of butter until tender in a sauce pan.
3. Add the cream of chicken soup, milk and cheese to the onion and heat until the cheese is melted (medium to medium high heat otherwise it will burn). Stir constantly.
4. Add rice and drained broccoli to the mixture.
5. Pour into a buttered casserole dish.
6. Melt the butter and mix with the crushed saltines.
7. Cover the top of the broccoli mixture with the buttered crackers.
8. Bake at 350* for 45 min.
